Winter salad – vegan, healthy and super delicious!

The food from the past holidays is still a bit heavy in your stomach and you want to start the new year fresh and healthy? Then we have the ideal recipe for you! We have put together a winter salad for you that is not only vegan and healthy, but also nutritious and super tasty!

You need this

The ingredients

  • 250g lamb’s lettuce (mixture)

  • 200g neutral yoghurt (here soy yoghurt)

  • pomegranate

  • 2 tsp agave syrup

  • 1 tsp mustard

  • 1 tsp sweet mustard

  • Juice 1/2 orange

  • Handful of share nuts

  • Handful of share lentil chips

Step 1

Wash the lettuce and deseed the pomegranate

To prepare, wash the lamb's lettuce well and spin it dry. Then peel the pomegranate.

Caramelize nuts

Now let a handful of nuts from the share organic nut mix caramelize in a large pan with a dash of agave syrup until golden brown.

Prepare the dressing

For the dressing, mix the yoghurt with the mustard, agave syrup and the juice of an orange. Season with salt and pepper.

Mix everything together and serve

Mix the salad well with the dressing on a deep plate or in a bowl.

Top and enjoy

Now garnish everything with the pomegranate seeds and caramelized nuts and sprinkle some crumbled lentil chips on top for an extra portion of crunch – done!
